I see that on the Weekend Vrij description (the subscription that offers unlimited travel during weekends) it says that you have 40% joint journey discount during off-peak hours for up to 3 passengers travelling with you. Does that mean that I have the usual 40% discount on off-peak hours on weekdays even if I’m travelling alone?

No. I know it seems a bit odd, but with Weekend Vrij you don't get discount in off-peak hours on weekdays yourself, but you can take up to three people with you who do get the discount.
If you want to get the discount yourself, you should change your subscription to Weekend Vrij (the same subscription) and then add the 40% discount in off-peak hours.
