My wife and myself want to travel by train from Amsterdam to Maastrict on 26 June 2024. Do we need to book spaces for our bicycles?

Reservations for bicycles are not needed anymore, they were only obligated for a while during the pandemic. Unless these are folding bikes and you fold them up completely, you do need to buy a ticket to take them, which is not valid during rush hours when bikes are not allowed on the trains, except for fully folded folding bikes.
