Treinrit met fiets van Maastricht (NL) naar Leuven (België)

My wife & I will be taking our bikes from Hoorn to Sittard on Thurs Aug 25 (NOT during rush time).  Can I purchase tickets for 2 people and 2 bikes NOW on this IC train? For THIS trip, we need to verify we have space for us and our bikes. Most other train&bike trips will be short local trips in Sept that we would purchase when needed.  Should we buy online rather than at the kiosks in the stations? We are from USA and have done European bike trips with trains a few times but regulations seem to be differnet now.  This NS community forum has given some info and URLs but we want to make sure we have current info for traveling by bike in NL, Belgium, France. Thank you!!
