I recently returned to the Netherlands for work and used my NS card, which has a balance of 40 euros. However, to my surprise, they made me pay for the trips through my bank account. I would like to know how I can proceed to have NS return the 40 euros that I have in my account and deposit them into my Spanish bank account.

If you have NS Flex, there is no balance on your OV card. The money is refunded after 1 month after requesting it, or calculated with your trips. See the 1nd or 2nd invoice for this.
If you used your chipcard to travel and "they made me pay for the trips through my bank account” (you didn't explain that further unfortunately), then it sounds like you have an NS Flex subscription of some kind. If you indeed did order NS Flex, then any balance on your chipcard will be refunded automatically and should appear on your next monthly invoice.
If you have an NS subscription, check Mijn NS. With NS Flex, you pay for your trips monthly.
Most likely, a credit/debit card or mobile phone was scanned when checking in and out. Your bank account will then have a deduction with 18 characters starting with NLOV. Also see https://zelfregelen.ovpay.nl/reisoverzicht (language can be set to English). Billing takes place the next day.
Keep your cards (and phone) separated, so take the ov-chipcard out of your wallet or phone cover.
